The GourmAunt: Fancy Seafood Medley
By Chef Marc Borenstein, naturallysavvy.com
Love and passion are complex emotions; however the expression of great love and great passion is simple!
I am convinced that true love is truly expressed through passion on a plate. The pallet and the heart are certainly connected. Eating like a true gourmet should not be limited to people that can go out to five star restaurants whenever they please. Why not bring the five star foods home?
How better to become known as the ‘GourmAunt’ who spoils our pallets and feeds us the way no one else has, especially without having to get all dressed up and behave like little princes and princesses in the fancy schmancy restaurants? I personally always remember my aunt as the one who introduced me to a plethora of different foods and made me feel special during that process. With a generation obsessed with Hollywood and the limelight, what an opportunity to have our aunt make us feel like one of those stars at the Golden Globes!
Seafood Medley Al Oglio Pizza on Baked Naan
This delectable dish can be made with lobster, crab, or shrimp—even all three if you wish (as I did)!
Ingredients
Lobster, crab, or shrimp
Naan
½ cup of olive oil
1 whole crushed garlic
1 large sweet onion
Mushrooms
3 tbsp. of dried basil
3 tbsp. of dried oregano
2 tbsp. of Italian spices
1 large can of diced tomatoes
Parmesan cheese
Lemon juice
Directions
1. In a large deep skillet/pan, over medium heat, put ¼ cup of olive oil.
2. Add 1 whole crushed garlic.
3. Add a bunch of chopped fresh basil.
4. Add 1 large sweet onion, chopped (thumbnail-sized pieces).
5. Allow to cook for a while, stirring often until the onions become soft.
6. Add 227 g. of mushrooms of your choice. (I use Cremini.)
7. Allow to cook for a few minutes, stirring from time to time.
8. Add another ¼ cup of olive oil.
9. Add 3 tbsp. of dried basil.
10. Add 3 tbsp. of dried oregano.
11. Add 2 tbsp. of Italian spices.
12. Mix well.
13. Add 1 large can of diced tomatoes.
14. Mix well and allow mixture to cool down for a while.
Naan
1. Place naan bread in the oven (buttered) at 400 degrees.
2. Take out when crispy (about 8 minutes).
Seafood (for lobster, crab, and shrimp)
1. Add crab meat to pan (about 120 g.).
2. Remove lobster tails from shells (4 tails).
3. Peel shrimp (large 31-40 or jumbo 16-20).
4. Dust with lemon juice and Parmesan.
5. Broil for 4 minutes a side.
6. Cut lobster and shrimp into smaller pieces and add to pan.
Finish and Serve
1. Cover each naan with a healthy serving of the seafood mix.
2. Finish with a good dusting of Parmesan cheese.
